This weekend I was brainstorming ideas for my next WalkJogRun post. I knew I wanted to create a healthy sweet treat and was eyeing some recipes for black bean brownies. As I started researching different recipes I realized that almost all of them were naturally gluten-free as the black beans take the place of the flour! A happy coincidence but exciting all the same.
I don’t think I can do these black bean brownies justice through the pictures and words alone. You just have to make them yourself. I was blown away with how good they were. Considering they have no butter in them and only two tablespoons of oil.
They were fudge-y and decadent without being overly sweet and SO easy to make. I also loved the batter and since they are vegan you can have big spoonfuls straight from the bowl without worrying about the raw egg.
Next time I may add a few tablespoons of peanut butter but otherwise this recipe is pretty flawless.
One note that I mention in the WJR post but will reiterate here, these are not overly sweet, which I like. If you’re looking for a sweeter treat I’d add a bit more sugar or a big scoop of ice cream on the top.
