Fall Vegetable Stew

Yesterday I mentioned that I made a fall vegetable stew on Sunday. The last bits of summer have started to dissipate and fall is leaning in as the trees turn red and yellow. Almost every porch in our new neighborhood is adorned with a pumpkin, or two and the mornings and evenings are cool, even if the days are warm. Needless to say, these changes have put me in the fall spirit and while watching football on Sunday afternoon I knew a good stew was in order.

This fall vegetable stew reminds me a bit of my quinoa corn chowder so if you like that you’ll enjoy this. It’s hearty but not heavy and you can use any mixture of vegetables. I’m also about a week late to the party but October 2nd was National Kale Day so in celebration I added a couple handfuls of torn kale. I’ve been eating this stew for three days now and it just gets better and better each day.
