Healthy Green Juice with Spinach + Cooking with A Toddler

One of the benefits of buying discount produce is that there is always something in my produce drawer that needs to be used right this second, or maybe 5 seconds ago. That might seem like an unwanted problem but for me it means getting creative about reducing food waste and recipe creation. But, when my creative juices fail me, which often happens, this simply means getting juice creative. This recipe is for a healthy green juice with spinach and sparkling water and a great spin on my usual green juice. Best of all it was made with my favorite new kitchen helper.

Over the past few months I’ve noticed Noe getting more and more interested in what’s happening in the kitchen. She’ll grab the edges of the counter with her little toddler hands and pull herself up to take a peek. The ability to pull her body weight up by her hands fascinates me. Maybe she’s bound to be a gymnast.

Her interest in cooking has been a perfect opportunity to include her in the fun. I’ve been pulling a kitchen chair or stool up to counter so she can watch me cut vegetables while she sneaks little nibbles. Then she turns on the juicer (her favorite part) and I help her drop in the veggies and press them down.

I think getting her involved in the process makes the finished product that much more enticing.

This girl is a green juice queen, always has been. I know some kids are just picky, but I’ve found with Noe the key has been to start her early and lead by example.

Everything I eat is fair game and I always offer her a taste, even if she only takes one. Exposing her to different textures, spices, flavors has been important to me since she started eating solids and continues as she gets older.

So it should come as no surprise that while making our green juice we also made a fresh batch of sparkling water. Because not just any water will do, this 2 year old has a taste for “bubble water.”

That’s when I thought to combine the two? And true story, I put the drink in a fancy glass and she proceeded to guzzle down half of it proclaiming that she was very thirsty. Success!

This healthy sparkling green juice is so refreshing on its own but if, let’s say, it’s 5:30pm on a Thursday night and you want to be a little lax about the whole “healthy” thing, add an ounce of vodka or gin to the mix for the adults in the kitchen and it’s a green juice cocktail!

Healthy Sparkling Green Juice with Spinach and Cucumber

A refreshing and <span class="mceItemHidden" data-mce-bogus="1"><span class="hiddenGrammarError" pre="and " data-mce-bogus="1">low calorie</span></span> drink. Vegan and <span class="hiddenGrammarError" pre="and " data-mce-bogus="1">gluten free</span>.</span>
Serves: Two 8 ounce drinks
  • Sparkling Green Juice (vegan, gluten-free)
  • 1 apple
  • 1" knob of fresh ginger
  • ½ pear
  • ½ lemon
  • 1 cup spinach
  • 1 cucumber
  • 2 cup sparkling water
  1. Juice fruits and veggies in a high-speed juicer.
  2. Grab two glasses and fill each half way with juice.
  3. Fill the rest of the glass with juice.
  4. Garnish with cucumber slices and add some ice if desired.
  5. If making alcoholic, add one ounce of liquor to your juice then top with sparkling water.
