With the success of my homemade veggie stock I was anxious to use it in a recipe right away. On Sunday, I had also made a huge batch of white beans so it seemed only natural to create a soup out of both. I also had a beautiful leek and a huge bunch of kale on hand. Together with the remnants of my dried out rosemary bush that doubled as our mini Christmas tree, I created this Kale and White Bean Soup.
I can’t say enough about what a game changer homemade stock is. It really took this soup to the next level. The only problem was that I didn’t make enough. We each had two bowls of soup for dinner and there were no leftovers. Sunday night week prep fail, lessons for next time.
If you’re looking for a healthy new year recipe, are fighting a cold or are fighting the cold, this is the soup for you. Packed full of healthy vegetables and filling beans, it made the perfect dinner for us Sunday night as the temperature plummeted to -1 again. I had it with my favorite pretzel roll from Whole Foods and some Earth Balance.
