I’ve posted a leek and potato soup recipe before but I made another version of this soup last night and it was better than the first recipe so I thought I’d share. For those of you who think soup takes forever let me prove you wrong. I got home from work around 5 yesterday. I took Eli out for a run and started cooking a little after 6:15. We were eating this leek and potato soup by 7:45 and that even included a pause half way through cooking to catch up with Michael on his day when he got home.
I love making soup. It makes me happy and the thing about soup is, it’s pretty low maintenance.
Once you’ve chopped and sauted, you’re pretty much done. Dump everything else in and let the liquid do the work.
No watching it brown.
We paired it with one of our better bottles of wine because well…we made it to the middle of the week.
We had a lot of good wine from our trip to Sonoma in November and life is too damn short not to drink your “good” wine.
What are we waiting for, really?
Drink the good wine and make soup.
