I waited to share this “recipe” for lentil bruschetta dip with you for almost a year. The first time I had it was at my mom’s the day we got engaged. I loved it then and request it whenever I’m home. This is the world’s easiest appetizer. I sometimes eat it as a main dish with tortilla chips as well, it’s super filling. It requires 2 ingredients: bruschetta mix and cooked green lentils, well 3 if you count the salt. It’s so unbelievably simple that I don’t even know if I should put it into the recipe format.
A couple of notes: I made my own lentils but you can buy the prepackaged lentils at Trader Joe’s if you want to make this even easier. My mom drains the bruschetta mix a little before adding it to the lentils. I’m partial to sauces so I prefer to keep the extra liquid. I used this Trader Joe’s bruschetta mix but any kind will do.
Without further ado I present you with…the world’s easiest appetizer…lentil bruschetta dip
- 1 container of pre-packaged bruschetta mix
- 2.5 cups cooked lentils
- Place both ingredients in a bowl and mix well.
