Ultimate Nachos

When I was I was in college I did what any college kid is prone to do, sorry mom…I went out drinking and then I came home and ate food. My friends and I ate the typical college stuff, lots of pizza, bags of gold (which were pretty much pieces of cheese inside a dough that had been deep fried) and of course everyone’s favorite, ultimate nachos.

I’m not sure how ultimate nachos got its name. I honestly don’t even think that the recipe I was using back then, because yes, even then I was in charge of the late night cooking, was that good or could really have been considered a recipe.

But, without fail, after a night of laughter and silly stories, my friends and I would always end up at home surrounding a big batch of ultimate nachos, reliving the night that the cab got a flat tire or that time I swan dived into a baby pool in my sundress or when we sent that weird friend of a friend away with “rations” (aka Halloween candy) for the long walk home.

The next morning I’d wake up to an empty cookie sheet minus a few chip pieces and warm memories from the night before.

My late night drinking days are, for the most part, behind me but ultimate nachos remain a staple in our house. They are our Friday night treat usually paired with a glass of wine instead of a kamikaze shot!

As my tastes have changed, so has the recipe but ultimate nachos still create quite the stir in this household. They are forever synonymous with feeling happy, loved and just a little bit crass for eating dinner off a cookie sheet.

One note: this is the first recipe I’ve featured here on QKE that is not vegan. I’m vegetarian and eat vegan often but am not 100% vegan, with cheese and chocolate being my most often consumed non-vegan foods. I don’t plan on filling this space with tons of cheese laden recipes but do want to represent my normal diet. This may seem silly to even bring up but many of my readers found my blog through the Virtual Vegan Potluck so I at least wanted to address it.

With that, on to the Ultimate Nachos.

    Love the idea of these nachos….i have never thought to put onions on nachos, i love it on everything else practically. Cant wait to try it!

      Yay! Glad I could inspire. I love onions on nachos. I think letting them caramelize and then using as a topping would make them the ultimate, ultimate nachos.

      Thank you Laura. I love adding veggies to unhealthy foods, makes me feel like I’m still doing something right for myself.
