Kale Salad with Miso Dressing

This kale salad with miso dressing is one of our favorite salads. It also happens to be one of the simplest to make. Michael loves this miso dressing so much I feel like he would probably drink it straight from the bowl if I wasn’t around. It’s the right touch of salty with the hearty kale and the sweet carrots. You can either steam your kale ever so slightly then add the dressing or you can massage the dressing directly on to the raw kale, either works great.

Kale Salad with Miso Dressing

For the salad:

1 bunch of kale, torn and steamed

1 carrot, peeled into ribbons

1/4 cup pepitas

For the dressing:

2 tablespoons white miso

1 tablespoon rice wine vinegar

1/2 tablespoon olive oil

1/4 teaspoon Bragg’s liquid aminos (you can substitute soy sauce or tamari)

1/4 teaspoon garlic

Juice of half a lemon

2 1/2 tablespoon water

pinch of sugar

Wash, tear and steam kale.  If you prefer raw kale just wash and tear into a big bowl.

Peel carrot into ribbons, add to bowl.

Mix all dressing ingredients in a separate bowl with a fork.  Add water last.  Depending on how much juice your lemon has you may not need the full 2 1/2 tablespoons.

Toss dressing with salad.  If you are using raw kale be sure to massage the dressing into your kale.  You should use your hands to work it in well.

Add pepitas.

Serves 2.
