  15. 1 tbsp smoked paprika,
  16. 1 tsp ground cinnamon,
  17. 1/2 tsp ground cumin
  18. 1/4 tsp cayenne pepper,
  19. 2 tsp dried oregano,
  20. 1 tsp dried thyme,
  21. 1 tbsp soft light brown sugar,
  22. Salt and pepper to season,
  23. 4 tbsp olive oil for frying
